Settings earnings to zero couldn't be easier. All you do is absolutely nothing. To have the subject of your case not receive any earnings for a given period of time, don't define any jobs for that period. Since receiving earnings requires being employed, zero jobs means zero earnings.

Example

You're working on a personal injury case. The plaintiff lost his job as a result of the injury and couldn't work for six months. At the end of those six months he had recovered enough to find employment. In Step 3: Employment, under the Actual and Projected Employment With Injury tab, his first job should end shortly after the injury date, since it would take at least a few days before he was let go. There will be some amount of earnings associated with this short period of employment. His next job should start six months later, since that's when he started working again, and when his earnings will resume. For those six months of being unemployed, he will receive zero earnings.
